In a bowl, mix the mince, chopped parsley, egg, salt and pepper. Make a flat disc shape from the mix, then place a mini mozzarella ball in the middle, and close the mince around it to form a ball. Repeat until you have 6 meatballs.
Cut the ends off the onions, then remove the skin and carefully take off the outer layers, keeping them intact. Place the meatballs inside the onion rings and wrap each one in 2 rashers of bacon.
Place a kebab stick in the centre of each ball, and bake for 30 minutes at 180°C on a baking tray. After baking dip the lollipops in barbecue sauce and serve.
