Description
Are you more of a double steak burger type? This veggie burger with its zucchini patties might change your mind!
2 shallot
2 zucchini
1 potatoes
1 flour
salt & pepper
2 mayonnaise
2 onion
3 olive oil
4 hamburger buns
lettuce
4,5 parmesan
Step 1/5
Wash and dry the zucchinis. Cut off the ends. Peel, wash and dry the potato. Using a coarse grater, grate the zucchini and potato. Peel and finely dice the shallots. Place the zucchini, potato, shallots, salt and pepper in a bowl. Add in the flour and mix well. Shape into 4 patties.

Heat olive oil in a large skillet. Cook the patties for 6-7 minutes on each side over medium heat. Set aside.

Cut the burger buns in half, then toast them for a few moments. Dice the onions and chop the lettuce leaf.

Assemble the burgers. On the bottom of each burger, spread some mayonnaise. Add the lettuce, a quarter of the onion, a zucchini patty and a quarter of the parmesan cheese. Cover with the top bun. Serve and enjoy!

For a lower healthier veggie burger recipe, replace the potato with sweet potato!

For a lower GI vegetarian burger recipe, replace the potato with sweet potato!
