Dinner in Monterrey? With homemade tortillas and sautéed beef, this homemade spicy fajita recipe is a true culinary rodeo for your taste buds!
0,75 flour
0,5 corn flour
1 salt
1 baking powder
1 sunflower oil
2 onions
1 red bell pepper
1 green bell pepper
0,65 ground beef
2 tomato paste
1 avocado
1 olive oil
1 fajita spice mix: garlic, cumin, chili
1 fresh cilantro
Step 1/4
In a bowl, mix the two flours, salt, and baking powder. Pour in ¾ cup water and the sunflower oil, then knead by hand for 5 minutes. Let the dough rest for 30 minutes.
Step 2/4
Divide the dough into 4 equal portions on a well-floured work surface, roll out each dough piece thinly with a rolling pin to form tortillas. In a skillet, cook the tortillas (without adding any oil/fat) for 1 1/2 minutes on each side.
Step 3/4
Prepare the filling. Peel the onions, dice the first one and cut the second one into thin strips. Wash and cut the peppers into strips. In a frying pan, heat a little olive oil, then add the diced onions and spices. Let them brown, then add the meat and tomato paste. Cook for 10 minutes. In a separate pan, heat a little olive oil, then cook the peppers and the onion in strips over medium heat.
Step 4/4
Peel and slice avocado. Place a few avocado slices, some meat and a handful of grilled vegetables on each tortilla. Sprinkle with cilantro leaves, then fold over the edges. Enjoy!
Tip
Traditionally, Mexican fajitas are served with a beef filling. However, why not change the rules and try them with chicken, scrambled eggs, or even tofu for a vegan option? You can also enhance this meat filling with red kidney beans, grated cheddar cheese, or sour cream.
