Step 1/7

Place bone marrow bones in a muffin tin and bake in the oven until the marrow is soft and easily scooped out.

Step 2/7

Remove the bone marrow from the bone. Add breakfast sausage to each muffin cup, then top with bacon, egg whites, and cheddar cheese. Place egg yolks in a separate muffin tin. Place both muffin tins in a large pan and add water to the pan. Cover the muffin tins with foil and bake until the egg cups are set.

Step 3/7

Pour some bone marrow into a bottle of mayo and mix well. Whip the cooked egg yolks with paprika and the mayo mixture. Place the whipped mixture in a piping bag.

Step 4/7

Remove the egg cups from the muffin tin. Pipe some of the egg yolk mixture on top of each cup, then sprinkle with paprika and chives. Serve and enjoy!
