Pour pancake batter into a pan, creating a circle around a bowl. Cook it, then remove the bowl and position butter in the center. Add eggs and cheddar.
Step 2/2
Take it off the heat, and layer crispy bacon slices, tomatoes, and lettuce on top. Create a pancake-omelet sandwich by placing another pancake on top. Drizzle maple syrup over the top, sprinkle with chives, and enjoy!
