Step 1/3
Make balls of cookie dough and place in a large pan. Bake 12 minutes at 350°F. Allow to cool.
Step 2/3
Mix Baileys, mascarpone, sugar and heavy cream. Allow to freeze. Spread the ice cream over the cookie (to the same circumference) and make a flower pattern on top. Mix some of the melted chocolate with oil and pour in the middle of the ice cream.
Step 3/3
Lay a sheet of parchment paper on top of a bottle of baileys. Make a decoration with the melted chocolate. Place on top of the ice cream and sprinkle with sliced almonds. Serve and enjoy!
