Layer the two cakes on top of each other and create a round hollow at the center. Proceed to fill the cavity with whipped cream using a piping tool. Prepare both the white chocolate and milk chocolate ganache by whisking them thoroughly. Next, put the ganaches in separate piping bags and use them to decorate the cake.
Step 2/2
Prepare a syrup by poaching the pears in hot water with sugar and vanilla bean. Once done, let the pears cool down before dipping them in melted dark chocolate and adding a sprinkle of sliced almonds. Top the cake with the chocolate-coated pears, serve and enjoy!
