Step 1/2
Arrange M&M's in a single layer on a sheet pan. Using melted chocolate, pipe circles over the M&M's to create a smooth disk on top.
Step 2/2
Gently press a cookie onto the chocolate, allowing it to adhere to the M&M's. Once the chocolate sets, sandwich two of these cookie-M&M disks with a scoop of ice cream in the middle. Serve and enjoy!
