Step 1/5
Place the half wheel in the raclette machine. Place the slices of prosciutto on top and allow to heat up. Cut the onions into pieces, brown them in a pan with a drizzle of olive oil, sprinkle them with sugar and let them caramelize. Add the genepi while flambéing with the caramelized onions then mix.
Step 2/5
Cut the baguette in 2, cut the half-baguettes into 3 pieces, hollow out the inside with a rolling pin then garnish with the caramelized onions. Place 1 pickle in each sandwich, place the raclette cheese with the prosciutto in each sandwich. Form a spiral pattern with the mashed potatoes on the back of the skimmer, dip the skimmer in the hot oil until golden brown. Repeat the process 11 times.

Place 6 spirals on a plate, place the sandwiches vertically on the spirals, place a spiral on the side of each sandwich, sprinkle with parsley and enjoy!
