Ingredients for 6 people

40 lollipops

2 round cakes

3 buttercream frosting

2 raspberries

1 cotton candy

0,5 glucose syrup

1 water

1 blood orange juice

1 lemon juice

1 tequila

4 white chocolate

Step 1/5

Melt the lollipops in a pan and remove the sticks. Wrap the top of a large bowl with cling wrap. Make sure it is very tight. Pour the melted lollipops over the cling wrap and press down with a cake ring to create a sugar dome. Repeat the process to have 2.

Bake two cakes inside of metal bowls to create a dome shape. Pipe vanilla buttercream inside each sugar half. Cut each half of cake to fit inside of the domes. Use an ice cream scoop to remove the center of the cakes.

Make a sorbet by mixing fresh raspberries, cotton candy, glucose syrup, water, blood orange juice, lemon juice and tequila. Mix over medium heat and blend until smooth. Freeze until solid.

Add the sorbet ball to your cake and sugar domes. Melt the white chocolate in a microwave. Roll a piece of parchment into a roll and put it inside of the tube center. Place both the tube and the paper in a small ramekin and pour the melted chocolate inside. Allow to harden fully.

Step 5/5

Use melted white chocolate to close the sphere and attach the stick. Serve and enjoy!
