Gluten-Free Chicken Pizza

4 chicken breasts

1 garlic clove

Mozzarella string cheeses

4 tbsp tomato sauce

1 cup arugula

1 yellow tomato

1 green tomato

Cherry tomatoes

1 onion

Salt & pepper

1 red onion


Parchment paper

1. Chop the chicken breasts and mix with the chopped garlic, salt, and pepper. Spread the chicken mixture on a lined baking sheet. Top with a second piece of parchment paper and roll the chicken out to create a circle.

2. Place string cheese on the border of the pizza. Use the parchment paper to fold the chicken around the cheese to create a stuffed crust.

3. Bake for 15 minutes at 375 °F. Cover with warm tomato sauce, garnish with the arugula, sliced tomatoes, and onion. Enjoy hot!
