Lay out 6 thick slices of red onions on a square of puff pastry. Arrange mozzarella in the center of the red onion slices. Cover it with another sheet of puff pastry and gently press down with a shot glass, focusing on the center of the onions. Poke a few holes with a fork. Fill the space with a spoonful of shredded chicken that has been cooked with basil, garlic, and sundried tomatoes. After sprinkling with mozzarella, brush the pastry with egg wash.

Bake the pies at 350°F for approximately 30-40 minutes. Once they are done, drizzle the pies with balsamic vinegar and sprinkle some chives on top. Serve and enjoy!
