1 rectangular puff pastry
5 round zucchinis
2 balls fresh mozzarella
1 chorizo
3 egg
1 heavy cream
salt & pepper
Step 1/3
Lay the puff pastry in the dish. Cut the zucchinis in half lengthwise and lay them skin side up. Make 5 to 6 large slits in each zucchini.
Step 2/3
Alternately place a slice of mozzarella and a slice of chorizo folded in half in the slits. Arrange the zucchinis on the puff pastry.
Step 3/3
Mix the eggs, cream, salt, and pepper and pour the mixture into the dish. Bake for 45 minutes at 350 °F and eat hot!
