Take a large spatula and coat it with cornmeal mix before laying it on top of bacon slices. Fold the bacon over the spatula and fry until crisp. Remove excess oil. Dip this in the cornmeal mix, then coat it with fried onions. Fry again in hot oil.
Step 2/2
Remove the spatula to form a pocket. Fill the pocket with BBQ beef, coleslaw, and cheddar. Finish by drizzling with sour cream and sprinkling chives. Serve and enjoy!
