Drizzle olive oil over parchment paper on a baking sheet, then brush with rosemary and sprinkle parmesan on top. Cut potatoes into heart shapes and thread a rosemary sprig through each to resemble an arrow. Drizzle with more olive oil, then place them atop the parmesan layer and bake until cooked through.

In a bowl, combine cream cheese, mozzarella, parmesan, artichoke hearts, hot sauce, green onions, and mayo. Spoon this mixture into an artichoke cup, placing a heart-shaped cookie cutter in the center. Surround the heart with cheddar cheese and bake until gooey.

Garnish with chives and serve the artichoke dip with crackers and the heart-shaped potatoes. Enjoy!
