Total time : 30 min
Preparation : 30 min
½ watermelon
1 cup milk chocolate
1/2 cup heavy cream
4 oz mascarpone
1/2 cup powdered sugar
1 1/4 cups strawberries
2 cups raspberries
2/3 cup blueberries
1 cup blackberries
Mint
Step 1/3
Cut off the rounded end of the watermelon half. Make 8 incisions in the watermelon cap to form a star and set aside in the freezer. Melt milk chocolate and pour into star. Remove excess melted chocolate with a knife, remove the chocolate star from the watermelon, and set aside.
Step 2/3
Place the reMayning watermelon on a plate and remove the skin by pressing down firmly with a bowl. Make an incision around the top surface of the watermelon, leaving a 1 inch edge and being careful not to cut all the way down. Insert a knife in the side of the watermelon to remove the disc and set aside. Whip the heavy cream, mascarpone, and powdered sugar until stiff.
Step 3/3
Spread the whipped cream in the hollow watermelon and on the edges. Dice the removed watermelon disc and add it to the center with the strawberries, raspberries, blackberries, and blueberries. Sprinkle with mint leaves and place the chocolate star upside down in the center. Serve and enjoy!
