Step 1/3
Place the chicken breasts on the baking sheet, drizzle with olive oil, season with salt and pepper, and place in the oven for 25 minutes at 340°. When the chicken is cook through, use a fork to shred it.
Step 2/3
Melt grated cheddar and mozzarella cheese in a pan and place a slice of bread on top. Flip the cheesy toast to toast the other side. Repeat with the other slices of bread.
Step 3/3
Spread mayonnaise on the cheeseless part of the bread, add lettuce, tomatoes, and shredded chicken. Close with a second slice of bread. Repeat to have a double-decker sandwich. Enjoy!
