1/2 cup bacon
4 tbsp sour cream
4 eggs
2/3 cup shredded mozzarella
Parsley

Step 1/3
Cook the potatoes for 20 minutes in salted boiling water. Drain and use a spoon to core the potatoes.
Step 2/3
Fry the bacon in the pan, then crumble into bits. Spread a layer of the sour cream in the bottom of each potato skin and add the bacon bits on top. Crack an egg into each potato and sprinkle mozzarella on the egg white.
Step 3/3
Bake for 15 minutes at 350 °F. After baking, sprinkle with salt and pepper and a little chopped parsley before serving.
