1 green pepper, chopped

2 monterey jack cheese

Step 1/2
Beat eggs, milk, salt, and pepper together. Pour into a non-stick pan and start cooking, add in black beans, tomatoes, green pepper and cook until desired consistency is reached. Do not over cook as the eggs will continue cooking in the next step. Place eggs into a heat-safe bowl, then flip back into pan.
Step 2/2
Cover the egg dome with cheese and cover the sides of the pan as well. Cover the cheesy dome with the bowl, and cover everything with a lid. Cook until the cheese around the edge is fried and the cheese on the eggs is melted. Serve with avocado, hot sauce, sour cream and green onions.
