5 potatoes

1/2 cup melted butter
3/4 cups milk
1 lb ground beef
1 onion, chopped
1 green bell pepper, chopped
1/4 cup brown sugar
2 cloves garlic, minced
1 tsp paprika
1 tsp Worcestershire sauce
1 cup tomato puree
1 tbsp mustard
2/3 cup water
Sour cream, to taste
2 cups jack cheese
Chives, for garnish
Step 1/3
Drizzle olive oil on potatoes, add salt and pepper. Bake for 1 hour at 350 °F. Once cooked and cooled, remove tops and scoop out centers of potatoes. Mash with melted butter and cream. Spread the mashed potatoes into the bottom of a baking dish

In a bowl, mix ground beef, onion, green bell peppers, brown sugar, garlic, paprika, Worcestershire sauce, tomato puree, mustard, and water. Then cook over medium-high heat with a little olive oil until cooked through. Fill each empty potato with the ground beef mixture.
Step 3/3
Place each filled potato, filling side-down, into the mashed potato-lined baking dish. Cover the mashed potatoes with sour cream then sprinkle the whole dish with jack cheese. Bake for 30 minutes at 350 °F, or until cheese is melted and casserole is warmed through. Once out of the oven, dollop each potato with a little sour cream and sprinkle chives over the top of everything. Enjoy.
