Step 1/3
Using a knife, make slices in the potatoes without cutting all the way through. Place them on a parchment-lined sheet pan, brush them with oil and bake them for 1 hour at 350 °F.
Step 2/3
Cut the slices of ham and Swiss cheese into small squares, then distribute them among the slices in the potatoes.
Step 3/3
Pour the bechamel sauce over the potatoes, cover in grated Swiss cheese, and bake for 15 minutes at 350 °F. Sprinkle chopped chives and enjoy.
