Description

This perfectly balanced New York style vegan bagel is a recipe from @veganica_paris! It features vegan truffle cheese, homemade pesto, and crunchy veggies all cradled between a fresh made bagel!


Step 1/3

Slice the carrots, cucumbers, and tomatoes into thin strips.

Step 2/3

Blend the spinach, basil, garlic, pine nuts, and olive oil.

Step 3/3

Slice the bagel in half and lightly toast it. Spread the pesto over both ends and layer the vegetables over the bottom half. Add your favorite vegan cheese, close up your sandwich, and enjoy!

Tip

Swap out the vegan truffle cheese for your favorite vegan cheese or use whichever cheese you prefer for a vegetarian option. You can even add vegan meat for an even more savory sandwich!
