8 triangles Laughing Cow cheese
2 tortillas
4 slices ham
1 jar red pesto
1 bag arugula
Chives
1 tbsp olive oil
1 tbsp lemon juice

Step 1/2
Using a glass, cut circles out of the tortilla and place them in a muffin tin. Brush the tortillas with oil and paprika and bake 5 minutes at 350 °F.
Step 2/2
Mix the Laughing Cow cheese with chopped chives and layer the mixture in the tortilla cups with ham and red pesto. Top with arugula, add a squeeze of lemon and serve.
