Step 1/3
Cut the reblochon cheese in 2 lengthwise then cut 1 of the halves into 8 portions. Bread these portions by passing them in the flour, the beaten eggs and the flour. Fry until golden brown. Cover the second half of reblochon cheese in the puff pastry then bake for 15 minutes at 350°F.
Step 2/3
Peel the potatoes then boil them in salted water. Grill the bacon bits in the pan. Drain the cooked potatoes then mash them with the butter, milk, salt, pepper and nutmeg. Add in the grilled bacon bits and chopped parsley. Place in a ziplock bag. Cut one of the lower corners of the bag to make a piping bag and form a dome of mashed potatoes on the puff pastry. Dig a hole at the top of the dome and pour the bechamel sauce into it. Cover the hole with the reMayning mashed potatoes.
Step 3/3
Add the fried portions around the mashed dome. Caramelize the onion in the pan and place it on top of the dome. Sprinkle with parsley and enjoy!
