Step 1/3
Put shot glasses in brioche and remove the pieces. Fry in a pan with butter, flambé with lemon, mint and rum.
Step 2/3
Make an Italian meringue with egg whites, sugar and water. Pipe on the brioche and use blowtorch to scorch the top of the meringue.
Step 3/3
Place shot glasses in brioche. Mix rum, sparkling water, lime juice, sugar and mint. Pour the mojito into the shot glasses. Serve with the cooked brioche pieces and enjoy!
