Pipe meringue into the wells of a muffin tin, creating a small mound. Gently press a shot glass in the center of each meringue to form a hollow. Bake the meringue until crispy.
Step 2/3
Once baked and cooled, carefully remove the meringues from the tin. Fill the center with crushed graham crackers, lemon curd, and whipped cream.
Step 3/3
Decorate with fresh lemon zest, a slice of lemon, and mint. Serve and enjoy!
