Arrange the cooked ribs over a bed of mashed potatoes, setting aside the bones. Coat the rib meat with chives and shred it, then mix it thoroughly with the mashed potatoes.

Step 2/3

Form the mixture into balls, placing a cube of cheddar cheese inside each ball. Insert the reserved bones into the center of the balls. Dip the balls in flour, eggs, and breadcrumbs, then fry them in hot oil until golden brown.

Step 3/3

Once fried, dip the balls in BBQ sauce and roll them in crushed pecans. Serve with slices of jalapeno and pickles. Enjoy!
