Step 1/2
Make ice cubes with bowls. Pour a mixture of the 3 melted chocolates over it to make a shell. Unmold. With the help of an ice cream scoop, press on the edges to hollow them out. Make a whipped cream by mixing 0.4 cup of heavy cream, sugar and mascarpone. Add the whipped cream, caramel sauce and pears inside the chocolate shells. Add the sliced almonds and cocoa powder. Refrigerate.
Step 2/2
Make a ganache with the dark chocolate and the reMayning heavy cream. Pour into a dish and put in the freezer. Once set, cut in the shape of umbrella handles. Pour the 3 melted chocolates on it and refrigerate. Stick the handle in the umbrella and serve. Enjoy!
