1 leek
1 1/2 pounds ground beef
3 eggs
1 cup breadcrumbs
1 package Babybel cheese
2 packages sliced bacon
6-8 potatoes, cooked
1 egg yolk
3 1/2 tablespoons butter
1 cup parmesan, grated
1cup bechamel sauce
Salt & pepper, to taste
Parsley, for garnish
Parchment paper

Step 1/3
Remove the dark green tops from the leek. Slice the leek lengthwise and remove 6 outer layers. Set aside. In a bowl, add the ground beef, eggs, breadcrumbs, salt and pepper. Fill one leek slice with the ground beef. Place 1/2 slice of the Babybel cheese on top of the meat and along the length of the leek. Cover the cheese with more meat, followed by another slice of leek. Wrap the leek with bacon and place it on a baking tray lined with parchment paper.Repeat these steps 2 more times. Bake for 25 minutes at 350°F.
Step 2/3
In a bowl, add the potatoes and mash until smooth. Add the egg yolk, butter, parmesan, salt and nutmeg. Mix well. Turn the bowl of mashed potatoes upside down onto a plate. make a well in the center of the potatoes with a glass. Set aside
Step 3/3
Slice each meatloaf into thirds and arrange the slices around the mashed potatoes. Fill the well in the center of the potatoes with the bechamel sauce. Garnish with parsley and enjoy.
