Step 1/4
Lay a pie dough in the pie pan and prick it with a fork. Cut each zucchini in 2, so that you have 8 pieces of different sizes, and core them.
Step 2/4
Brown the chopped onion and add the ground beef. When it's all well cooked, pour the tomato sauce over it and add chopped parsley.
Step 3/4
Fill the zucchini cores with the beef mixture. Roll each zucchini in pie dough. Arrange all the zucchini rolls upright in the pie pan, in a circle from the smallest to the largest. Bake for 20 minutes at 350 °F.
Step 4/4
Beat the eggs, heavy cream, chopped chives, salt, and pepper and pour into the pie that has just come out of the oven. Spread the mozzarella on the zucchini and bake for another 20 minutes at 350 °F. Slice and enjoy!
