3 puff pastries

0,5 brown sugar
1 cinnamon stick
2 powdered sugar

0,6 heavy cream
3 mascarpone

Step 1/3
Make the mulled wine by heating the wine, spices and brown sugar. Add 3 peeled pears and cook for 30 minutes. Remove from heat and allow to cool.
Step 2/3
Cut the puff pastry into squares. Overlap the 4 corners and cut in the corners to make a fold. Brush with egg and place in a bowl. Wrap the other 3 pears in aluminum and press down into the dough. Bake 20 minutes at 350°F. Once out of the oven, remove pears form foil and puree them.
Step 3/3
Reduce the mulled wine to obtain a caramel. Mix mascarpone, heavy cream and powdered sugar. Place pear puree in the puff pastry then pipe the whipped cream. Place the cut pears lightly. Insert pieces of caramel into the pears and sprinkle with cinnamon. Serve and enjoy!
