Step 1/4
Mix flour, salt and water until you obtain a smooth dough. Spread on a sheet of parchment paper. Cut the endives in half and add to the middle of the dough. Add the bay leaves, herbs, butter, olive oil, salt & pepper. Close the dough around the endives and bake 30 minutes at 350°F.
Step 2/4
Remove the endives from the dough. Cook on the grill with butter, sugar and cognac. Fill the muffin tin with ham. Add the endives, bechamel sauce and parmesan. Bake for 15 minutes at 350°F.
Step 3/4
Cut 6 strips of puff pastry and add the ham. Twist and create braids. Flip a muffin tin upside down and add the braid (in a zig-zag). Brush with egg and bake 20 minutes at 350°F.
Step 4/4
Serve the endives with the puff pastry braid and enjoy!
