1 lb potatoes
2 tbsp corn starch
2 tbsp breadcrumbs
1/2 cup shredded parmesan
1/2 cup shredded mozzarella
Vegetable oil (for frying)
Step 1/3
Mix cooked potatoes with the corn starch, breadcrumbs and cheeses, then mash to make mashed potatoes. Form a large ball with the potato and flatten it into a circle on a parchment-lined sheet pan.
Step 2/3
With the cap of a plastic bottle, cut two holes for eyes out of the potato, and make a smiley face using a knife. Freeze for 1 hour.
Step 3/3
Fry until golden brown, then enjoy with ketchup.
