Step 1/2
Brown the ground beef with the chopped onion, salt, and pepper. Cut the tops off of the peppers and remove the seeds. Place all the peppers upright in the pie dish.
Step 2/2
Separate the yolk from the egg whites. Stuff the peppers with the cooked meat then add the egg whites on top of each. Pour the tomato sauce into the pie dish around the peppers and cover with grated mozzarella cheese. Bake for 30 minutes at 350 °F. 5 minutes before the end of the cooking time, add the egg yolks. Remove from the oven, sprinkle with chopped parsley, and enjoy!
