The World’s Crispiest BBQ Chicken Roll-up
Hot water on chicken skin = crispiest chicken ever 🙂
Total time: 45 minutes
Prep time: 15 minutes, Cook time: 30 minutes
Ingredients for 6 people
3 lb of whole chicken
1/2 cup of chefclub barbecue rub
8 slices of candied bacon
Turn an entire chicken onto its backside and make 2 horizontal slits in the flesh. Pour boiling water over the chicken for extra crispy chicken. Then cut open the chicken and remove the bones so you have one large sheet of chicken. Cover with parchment paper, pound the chicken, and cover with barbecue rub.
Pour barbecue sauce over a long rectangular cheddar cheese block. Then place two slices of candied bacon on top and repeat on each side of the block. Place the cheddar cheese block in the center of the chicken and fold over the edges of the chicken, securing with skewers on each end.
Bake for 15 minutes at 375 °F, remove from oven, rub with butter, then return to the oven for another 15 minutes, until the chicken is cooked through. Sprinkle with chives, serve with potato wedges, and enjoy!
