Ingredients for 6 people

6 eggs

10 3/5 oz of spinach, cooked & minced

1 1/2 cups of flour

1 3/4 cups of fat-free cottage cheese

4 slices of ham

1/3 cup of dried cranberries

1/3 cup of pistachios, shelled & chopped

1/3 cup of poppy seeds

1/3 cup of paprika

1/3 cup of curry powder




Electric hand mixer

Parchment paper

Dish towel

Step 1/4

Beat the eggs with a pinch of salt and mix with the cooked spinach. Add the flour and then pour this batter onto a parchment paper lined baking tray. Bake for 10 minutes at 350 °F. Remove from the oven and let the dough rest, covering it with the damp dish towel.

Step 2/4

Mix half of the cottage cheese with chopped chives and spread over the cake. Add the slices of ham on top. Roll the cake widthwise into a tight log and refrigerate for 1 hour.

Step 3/4

On a sheet of parchment paper, make 6 rows side-by-side the length of the log with the cranberries, chopped chives, crushed pistachios, poppy seeds, paprika, and curry powder.

Step 4/4

Cover the refrigerated cake log with the rest of cottage cheese and roll it in the condiments to cover it. Refrigerate for another 20 minutes, slice, and enjoy!
