Prep time: 30 minutes, Cook time: 55 minutes, Rest time: 2 hours

Ingredients for 6 people

1 pie crust dough

2 1/4 cups of whole-milk ricotta cheese

4/5 cup of crème fraîche or sour cream

4 eggs

1 cup of sugar

2 1/2 tbsp of flour

1 pincée of salt

3/5 cup of raisins that have been soaked for more than an hour in rum (optional)


Step 1/3

Roll out the dough and place it in a pie pan. Bake at 350 °F for 10 minutes.

Step 2/3

Meanwhile, mix the ricotta cheese with the sugar, salt, and sifted flour. Mix in the crème fraîche and eggs. Beat with an electric mixer to obtain a smooth and homogeneous texture (add in the marinated raisins if you want this variation of the recipe).

Step 3/3

Pour the mixture over the dough and bake for 45 minutes at 350 °F. Let cool and serve chilled.

Chefclub's Tips & Hacks

You can accompany your cake with a quick homemade red fruit coulis! Mix 4 cups of a mixture of red fruits (blackberries, raspberries, strawberries, blueberries, blackcurrants...) with 2 tablespoons of sugar and a few drops of lemon juice, until you get a smooth coulis. Keep chilled until you are ready to use it on the cake!
