4 red cherry tomatoes
4 yellow cherry tomatoes
2 cups Monterey jack cheese, shredded
1. Cut the zucchinis in 2 lengthwise, scoop out the center with a spoon. Cut the chorizo into slices and the cherry tomatoes in half.
2. Fill the zucchinis with shredded cheese and then place alternating slices of chorizo and sliced cherry tomatoes.
3. Bake for 20 minutes at 350 °F on a baking paper-lined sheet pan, or until cheese is melted, golden, and bubbly. Eat warm! Make a side salad to serve as a side if you'd like.
