1. Roll out the pizza dough. Brush melted garlic butter on the top of the dough, then roll it up. Make enough roll-ups to wrap around a wheel of Brie cheese twice. Place the wheel of Brie on a lined baking sheet, then wrap the pizza dough around it. Brush the dough with more melted garlic butter and remove the top of the cheese.
2. Butterfly a whole chicken and place on top of the Brie and pizza dough. Cut slits in the skin of the chicken. Mix lemon juice, 1/2 cup of olive oil, salt, and pepper, then brush over the chicken. Insert the chicken in the slits of the skin. Place slices of lemon under the wings of the chicken and rosemary throughout the slits of the chicken. Cover the rest of the baking tray with bell peppers, purple potatoes, Romanesco broccoli, cauliflower, red onion. Sprinkle with salt and drizzle with olive oil. Bake for 1 hour at 350 °F or until a thermometer reads 165 °F. Remove the chicken and place the baking sheet in the oven for an additional 20 minutes. Enjoy!
