Strawberry Cake Roll

Ingredients for 6 people

2 1/4 lbs of strawberries

2 1/3 tbsp of sugar

20 ladyfinger cookies

vanilla beans

1 cup of mascarpone cheese

5 tbsp of powdered sugar

2 cups of heavy whipping cream



Plastic wrap


Step 1/4

Cook the strawberries and sugar together in a saucepan and use a strainer to separate the juice from the cooked strawberries.

Step 2/4

Dip the ladyfinger cookies in the strawberry juice and lay them on top of a sheet of plastic wrap to create a rectangular base.

Step 3/4

Use a hand mixer to mix the mascarpone, heavy whipping cream, powdered sugar, and vanilla until thick. Spread this cream on top of the ladyfingers and top with a layer of fresh strawberry slices.

Step 4/4

Roll the cake and top with the remaining whipped mascarpone cream. Use a blender to mix the remaining cooked strawberries and garnish the roll with a drizzle this strawberry sauce, slices of fresh strawberry, and mint. Enjoy!
