Strawberry Cake Roll

  1. Cook the strawberries and sugar together in a saucepan and use a strainer to separate the juice from the cooked strawberries.

  2. Dip the ladyfinger cookies in the strawberry juice and lay them on top of a sheet of plastic wrap to create a rectangular base.

  3. Use a hand mixer to mix the mascarpone, heavy whipping cream, powdered sugar, and vanilla until thick. Spread this cream on top of the ladyfingers and top with a layer of fresh strawberry slices.

  4. Roll the cake and top with the remaining whipped mascarpone cream. Use a blender to mix the remaining cooked strawberries and garnish the roll with a drizzle this strawberry sauce, slices of fresh strawberry, and mint. Enjoy!
