Fried Rice Layered Omelet

Ingredients for 4 people
1 2/3 cups of rice
3/4 cup of peas
3/4 cup of diced ham
2/3 cup of mozzarella cheese, grated
3 cherry tomatoes
salt & pepper
Beat the eggs with salt and pepper. Place the glass in the middle of the crepe pan and cook 3 thin omelets with holes in the center.
Cook the rice and peas separately in boiling salted water, drain and mix. Add the diced ham, salt, and pepper.
Place the glass in the middle of the salad bowl and lay an omelet on the bottom. Pour half of the rice mixture on top and then add another omelet. Pour in the rest of the rice mixture and top with the last omelet.
Flip onto a plate to demold. Remove the glass and pour the melted mozzarella into the central hole. Decorate with cherry tomato halves and chopped parsley and enjoy!
