  1. Place the potatoes on the baking tray lined with parchment paper, pour a drizzle of olive oil over them, season with salt and pepper, and bake for 40 minutes at 350 °F.

  2. When they come out of the oven, cut off the tops of all the potatoes horizontally and scoop out their flesh with a spoon. Mash the removed flesh with the mozzarella and pepper.

  3. Wrap each hollowed-out potato in 4 slices of bacon, leaving the hollowed-out part open. Stuff the potatoes with the mashed potatoes then place them on the baking tray.

  4. Crack an egg in each potato and bake for 15 minutes at 325 °F. Serve hot!
