Ingredients for 6 people
1/2 cup mozzarella, grated
24 slices bacon
Salt & pepper
1 baking tray
Step 1/4Place the potatoes on the baking tray lined with parchment paper, pour a drizzle of olive oil over them, season with salt and pepper, and bake for 40 minutes at 350 °F.
Step 2/4When they come out of the oven, cut off the tops of all the potatoes horizontally and scoop out their flesh with a spoon. Mash the removed flesh with the mozzarella and pepper.
Step 3/4Wrap each hollowed-out potato in 4 slices of bacon, leaving the hollowed-out part open. Stuff the potatoes with the mashed potatoes then place them on the baking tray.
Step 4/4Crack an egg in each potato and bake for 15 minutes at 325 °F. Serve hot!
