Ingredients for 6 people

8 eggs

2 1/2 cups of milk

1/4 cup of butter

2 3/4 cups of flour

2 cups of spinach

8 slices of smoked salmon

4/5 cup of heavy cream

1/2 cup of mozzarella, grated

parsley

salt & pepper

Step 1/4

Mix the flour with 4 eggs then add the milk and melted butter, stirring to make a crepe batter. Cook 5 crepes for about 3 min on each side.

Step 2/4

Form a log with aluminum foil the length of the loaf pan and lay it at the bottom of the dish. Line the dish with 3 crepes, following the shape of the log and letting them hang over the sides.

Step 3/4

Place half of the spinach on the crepes and add half of the smoked salmon on top. Mix the remaining eggs with the heavy cream, season with salt and pepper. Pour half of this mixture into the pan and cover with a crepe.

Step 4/4

Sprinkle with grated mozzarella cheese, place the remaining spinach and the remaining smoked salmon on top, then pour in the remaining egg mixture. Top the loaf with the last crepe and fold over the overhanging pieces. Bake for 35 minutes at 350 °F. When the loaf comes out of the oven, turn out the mold, remove the aluminum foil, and pour béchamel sauce into the hollow. Season with pepper, sprinkle with chopped parsley, and enjoy!
