Ingredients for 4 people

2 avocados

4 eggs

1 slice of swiss cheese

2 black olives, pitted

1/2 lemon

1 tbsp of mustard

1/2 cup of vegetable oil

salt & pepper

Step 1/4

Cut the avocados in half and remove the pits. Cut a thin slice from each half. Remove the skin from these strips and cut out 4 triangles from them, for legs. Form the toes of the legs by removing small triangles from one side of each triangle. Also cut 2 small ovals from the strips.

Step 2/4

Place the legs on each side of the avocado and the ovals at the top of the hole left by the pit. Place 1 egg yolk in each half.

Step 3/4

Form eyes with small discs cut from the slice of swiss cheese. Finish the eyes with small pieces of black olives. Make the nose with a piece of olive between the two ovals and add two whiskers with black olive arcs. Bake for 1 min at 350 °F.

Step 4/4

Blend together the lemon juice, egg whites, mustard, oil, salt, and pepper and enjoy the avocados with the sauce!
