Steak & Egg Breakfast

Ingredients for 6 people

8 potatoes, diced

olive oil

1 teaspoon thyme

8 eggs

3 bagels

1 package of bacon

1 onion, diced

1 red pepper, diced

1 green pepper, diced

1 pound of beef, cubed

2 cups of cheddar, melted

chives, for garnish

salt & pepper, to taste



Step 1/3

Peel and dice potatoes. In a pan, drizzle olive oil and add potatoes. Add thyme, salt and pepper to taste. Cook until the potatoes are tender. Place potatoes in a baking dish. Set aside. In a bowl, whisk together eggs, salt and pepper. Pour the eggs over the potatoes in the baking dish. Bake for 25 minutes at 350 °F.

Step 2/3

Cut bagels in half and wrap each half with bacon. Place the bacon wrapped bagels on top of the baked eggs and return to the oven for an additional 10 minutes.

Step 3/3

In a pan, sauté the onion, olive oil, red pepper, green pepper, salt and pepper. Add the beef and cook until done. Add the beef mixture to the baked casserole, pour melted cheese on top and garnish with chives before serving.
