A little fajita here, a little frittata there 🍳😋
Arrange the bacon on a parchment-lined sheet pan and bake 10 minutes at 350 °F.
Dice the potatoes, saute until golden brown, then remove half and set aside. Beat the eggs, then add hald to the potatoes still in the pan. Place 1 tortilla in the center, then arrange 6 slices of bacon and 2 slices of cheddar on top, then repeat 2 times. Finish with a tortilla and press down.
Mix the remaining eggs and potatoes, then pour them in to cover the tortillas. Cook covered 15 minutes, turn the omelette, then let it cook for 5 minutes without the lid. Remove from the heat, sprinkle chopped parsley and pieces of bacon. Cut in pieces and enjoy.
