Revamping this old recipe into your new favorite hipster brunch :)



Total time: 30 minutes

Ingredients for 4 people

1 lb potatoes

4 slices bacon

2 heads Savoy cabbage

4 eggs

1 egg yolk

3 tbsp butter

1/2 cup shredded mozzarella cheese

Salt & pepper

Parsley

Step 1/2

Peel and cook the potatoes in salted boiling water, then mash them with the eggs, salt and pepper. Put the mixture in a Ziploc bag, snip off a corner, and pipe the potato into swirls.

Step 2/2

Line the insides of the potato swirls with bacon, fill with cabbage and break an egg inside. Top with mozzarella, bake for 15 minutes at 350 °F, then enjoy hot.
