Ingredients for 4 people

1 cup of flour

1/2 cup of sugar plus 1 tsp sugar, divided

1 tbsp of baking powder

1 tsp of salt

1 1/2 cups of heavy cream

melted butter

1 tsp of cinnamon

white chocolate

11 yellow peaches

nutmeg

1/2 lemon, juiced

mint leaves

Step 1/2

Mix together flour, 1 tsp of sugar, salt, baking powder, and heavy cream. On a floured surface, roll out the dough to be 1/2 inch thick. Cut the dough into 2x2 inch squares, then cut the squares into triangles. Arrange the triangles in a greased bowl touching to create a crust bowl. You will have remaining dough. Brush with melted butter and sprinkle with sugar. Place a smaller bowl in the dough bowl then place balls of dough into the ball and brush with more melted butter and sprinkle with more sugar. Bake for 25 minutes at 350 °F until golden brown. When the bowls are baked, remove the inner bowls. Coat the dough bowls with melted white chocolate. Chill to harden.

Peel and slice all but one peach. Place in a sauce pan along with 1/2 cup of sugar, cinnamon, nutmeg, and lemon juice. Cook until soft and juice is reduced. Spoon peaches into crust bowls. Cover with a layer of ice cream, then a second layer of peaches, and a final layer of ice cream. Thinly slice the final peach and arrange the slices in a row with each slice slightly overlapping. Roll up the row to form a flower. Place the flower on top of the cobbler bowls. Surround the flower with the leftover baked dough. Garnish with a mint leave. Enjoy!
