Ingredients for 4 people

4 onions

10 slices of bacon

16 slices of american cheese

1/2 cup of flour

Tater tots

2 eggs

3/5 cup of cornstarch

3 tbsp of chives

2 l of frying oil

1 lb of ground beef

Salt & pepper

4 hamburger buns

4 leaves of lettuce

1 tomato

1 cup of cheese sauce

Tools

Melon baller

Ziploc bag

Scissors

Skewers

parchment paper

Step 1/6

Preheat the oven to 400°F. Cut the ends off of each onion and remove the peel. With a paring knife or melon baller, core out the center of each onion while keeping the bottoms closed. Add the scooped out onion bits to a ziploc bag and add 1/4 cup of milk to the bag. Seal the bag and let the onions soak for at least 20 minutes.

Step 2/6

Line up 4 rows of 4 slices of American cheese. Sprinkle with about 1/4 of the cooked chopped bacon, then cut each row in half lengthwise. Roll one half of the row up into a spiral, then roll that spiral up into the other half. Repeat with all rows of cheese. Add 1 tablesponn of milk to each onion center, then add a cheese-bacon spiral to the center of each onion. Place the stuffed onions on a baking sheet or in a glass cooking dish and bake for 25-30 minutes.

Step 3/6

Add the crumbled tater tots to the mixing bowl, then add the eggs, cornstarch, 2 tablespoons of the chopped chives, and 1/4 of the chopped bacon. Combine the ingredients well with a rubber spatula or wooden spoon. Add some of the mixture to a ziploc bag, seal the bag, then cut a large opening in one of the corners of the bag. Pipe the mixture onto a bamboo skewer. Add the skewer to a parchment-lined baking dish. Repeat with the remaining tater tot mixture. Cool or freeze the skewers for about 30 minutes to an hour. Heat the frying oil to 375°F.

Step 4/6

Drain milk from the bag of onion bits, then add the flour to the bag of soaking onions and shake well to coat the onions. Fry the onions until crisp and golden, then remove from the oil with a pasta skimmer to paper towels to drain the excess oil. Sprinkle with salt and pepper to taste if desired. Once the tater tot skewers have set, fry them in the oil until they are golden and crisp. Let them drain on the paper towels.

Step 5/6

Form the ground beef into four patties, seasoning with salt and pepper to taste. Cook the burgers according to your desired temperature. Toast the buns and add lettuce and tomato to each bottom bun.

Step 6/6

Remove the onions from the oven, then place a burger on top of each. With your turning spatula or other flat surface, turn the stack upside down then place each stack on a bottom bun. Pull the onion up to release the cheese sauce over the burgers. Place the onions onto a serving plate. Sprinkle some chopped bacon and chopped chives over the cheese sauce on the burgers then add the top buns. Add the heated cheese sauce to the center of each onion, then drizzle some over the tater tot skewers. Add the remaining chopped bacon and chives on the skewers and cheese sauce. Enjoy!
