Foolproof biscoff cookie tiramisu

"Traditional Italian tiramisu recipes use lady finger cookies soaked in espresso, however this Biscoff cookie version is a fun and easy variation!"

Ingredients for 6 people

1/4 cup of sugar

4 eggs

9 oz of mascarpone cheese

1 boîte of biscoff cookies

1 cup of espresso

1 tsp of unsweetened cocoa powder


Step 1/5

Separate egg whites from yolks.

Step 2/5

In a bowl, whisk together egg yolks and sugar. Add mascarpone and mix well to obtain a uniform mixture.

Step 3/5

Using an electric mixer, beat the egg whites until stiff. With a spatula, very gradually fold the whites into the mascarpone mixture, gently lifting the batter.

Step 4/5

Dip the Biscoff cookies briefly into the cold espresso or coffee and place on the bottom and edges of the baking dish. Pour the creamy mixture over the cookies. Sprinkle the top with cocoa powder using a small sieve.

Step 5/5

Let the tiramisu set in the fridge for at least 4 hours before serving.
