Foolproof biscoff cookie tiramisu
An easy recipe for an impromptu italian dinner!

Ingredients for 6 people
0.25 cup sugar
9 oz mascarpone cheese
1 boîte Biscoff cookies
1 cup Espresso
1 tsp Unsweetened cocoa powder
Step 1/5Separate egg whites from yolks.
Step 2/5In a bowl, whisk together egg yolks and sugar. Add mascarpone and mix well to obtain a uniform mixture.
Step 3/5Using an electric mixer, beat the egg whites until stiff. With a spatula, very gradually fold the whites into the mascarpone mixture, gently lifting the batter.
Step 4/5Dip the Biscoff cookies briefly into the cold espresso or coffee and place on the bottom and edges of the baking dish. Pour the creamy mixture over the cookies. Sprinkle the top with cocoa powder using a small sieve.
Step 5/5Let the tiramisu set in the fridge for at least 4 hours before serving.
